调味剂。主要作为绿茶风味改良剂(用量1%～2%)。L-谷氨酸和L-精氨酸虽均非必需氨基酸，但因婴幼儿对L-精氨酸合成能力很差，故可视作婴幼儿的准必需氨基酸。L-精氨酸对视网膜组织有改善作用，故可作为药物使用。
